Two quick breakfasts to kick off your day
You know the feeling. You get out of bed and it’s breakfast time already. What’s on the menu? Of course you don’t want to eat the same porridge or soy yoghurt and granola every day. That’s why I’ve got two different kinds of breakfasts for you. Not only with a twist, but also quick, healthy and delicious!
LETS GO AND DO THIS!
The mug cake.
This breakfast is ready in a jiffy! Pour all of the ingredients into a heat-resistant mug, stir and heat up. Eat on the spot or put in a bag for on the go!
What do you need?
– 30 g oatmeal
– half a banana
– 1 egg
– 1 teaspoon cinnamon
– ½ teaspoon baking powder
– ½ teaspoon honey
– a handful frozen blueberries
– toppings of your choice
Mash the banana with a fork in a heat-resistant mug. Add the honey, oatmeal, cinnamon, baking powder and blueberries and stir into the mash. Put the mug into the microwave and heat for 2.5 minutes at 600W. Take out and flip on a plate. Add your favourite toppings. Fruit, yoghurt and linseed spring to mind. You can also cool it down and take it with you on the go!
Pancakes, you’re wondering? They take way too much time! Not if you prep they don’t! So make a batch on Sunday night and put them in the fridge. For two days you will only have to jump out of bed, heat up the pancakes (or eat them cold) and/or take them with you on the go! Eat them plain or pimp the pancakes with some soy yoghurt and fruit.
What do you need for 8 small pancakes?
– 130 g oatmeal (blitz the oatmeal in a blender first)
– 1 tablespoon agave syrup
– 240 ml vegetable milk
– 2 tablespoons melted coconut oil
– 1 teaspoon cinnamon
Mix all the dry ingredients in a bowl. Stir well. Put a frying pan on and add a little bit of oil. First pour the vegetable milk over the dry ingredients and then the melted coconut oil. Stir well until you have a thick mixture. Leave for 5 minutes. Pour small, round pancakes into the pan, one at a time, and bake for two minutes. Flip carefully. Finish the pancake stack with toppings of your choice!
Getting out of bed and having breakfast will be totally fun again! Enjoy!
