December really is one of my favourite months. It’s all about cosiness, warmth, Christmas, food, spending time together and enjoying. At Christmas, you have just that little bit more time for breakfast and you want to make something special. I’ve got the perfect recipe for you! Healthy pancakes with caramelised apple and cranberry compote! Sounds good, huh? It smells and tastes really Christmassy. Perfect for ushering in the festive season, in other words! What you will need:
• 1 banana
• 2 eggs
• 3 tablespoons oatmeal
• 1 teaspoons of baking powder
• 1 apple
• 1 box frozen cranberries
• 1 tablespoon agave/honey
• Star anise
• 2 small saucepans
• Frying pan
1.) Throw the banana, 2 eggs, 3 tablespoons oatmeal, 1 teaspoon baking powder and 1 teaspoon cinnamon into a blender. Whizz and set aside. Grab the frying pan and grease it, pour in the batter to form small pancakes and turn them over. The batter is enough to make between 6 and 8 small pancakes.
2.) Chop the apple into small pieces and put them in a saucepan with some honey and cinnamon. Stir occasionally over a low heat until caramelised. Add some star anise to give it a soft, sweet taste.
3.) Then take the cranberries, pour them into the other saucepan and put on a low heat. Stir occasionally and gently mash into a soft sauce. You can add some sugar or agave/honey if you like because cranberries are quite tart.
4.) Leave both pans to simmer briefly.
5.) Building the pancake tower. Put the first pancake on the plate and place the caramelised apple on top. Put the second pancake on top of that, followed by the cranberry compote. Pile up the rest up of the pancakes in the same way until you have used them all up.
